The Site
- The landscaping around the building needs discourage the gathering or nesting of animals.
- About 3 meters around the building need to be maintained as vegetation free. Gravel or pavement should surround the building instead .
- Lighting around the doors should be kept to a minimum so as not to encourage insects.
Barrier Two
- Closing the building off via doors, drains, air vents is key to a secure second barrier.
- The second barrier is also rooted in the physical characteristic of the actual structure of the building. The design and engineering of the building are key to maintaining the highest level of hygiene.
- The production floor should be at a different elevation from the exterior of the building to prevent contamination from outside pathogens such as Listeria, which is found in dirt.
- Exterior doors should all be designed to open and close rapidly.
- Interior doors should have plastic curtain and air jets to maintain air temperature differences and to control pests.
